Bikini

Serves 10 guests

To make the Clementine Cordial (makes 750ml)

300ml fresh clementine juice
200ml fresh lemon juice
500g fine sugar

To make the Premix (yields 850ml, to serve 10)

400ml good quality vodka
100ml London dry gin
150ml peach schnapps
200ml clementine syrup (see above)
Fresh cranberries, as a garnish
Mandarin essential oil, for finishing

Method

For the Cordial: Put all the ingredients inside a pan, heat until it reaches a light boil, mixing so the sugar melts. Then, remove from the stove allowing it to reach room temperature entirely. Decant into an sealable bottle, close it keeping it in the fridge, where it will keep for up to four weeks.

To make Batch Mix: Mix all the spirits and syrup into a large bottle, leave to sit for 60 minutes, then filter it , ideally through a fine cloth, so it's fully clarified.

When ready to serve: Add 85ml from the premix to a stirring glass packed with ice, gently stirring gently for about 60 seconds to chill. Filter into a chilled martini glass or similar, top with some cranberries adding the final touch with a light spray of mandarin oil over the top.
